Crispy summer tostadas

This is one of our favourite go to breakfast or lunch. It’s crunchy, fresh, delicious and sparkles with goodness!

3-4

Ingredients

  • Store bought tostadas (you can find some excellent ones which are oven baked, made only with corn)
  • 1 lime
  • 1 Avocado (if you love avocado, you might want an extra half!
  • 1/2 cucumber
  • 1 chili (any work well)
  • 1/4 red onion
  • 10-12 cherry tomatoes (any tomatoes work well)
  • 1/2 capsicum (I love the orange ones)
  • Salt and pepper

Method

Cut capsicum, chili cucumber, red onion and tomatoes into cubes and add to a bowl. Season with salt and pepper to taste.

Smash the avocado with a fork and season with salt, pepper and a squeeze of lime.

Place a generous layer of smashed avocado on the tostada then spoon a large amount of the vegetable mix on top.

Serve with fresh lime.

Note

The vegetable toppings can be mixed up – corn works really well, so do beans and hummus for extra goodness!
