Crispy Corn fritters

This crispy corn fritter dish served with a fresh guacamole makes the perfect weekend brunch – best of all it can be whipped up in no time!

Ingredients

  • 400g tin corn (or fresh if you have it!)
  • 1 cup self raising flour
  • 1 tsp baking powder
  • 3 tbsp fresh lime juice (lemon also works)
  • 1 handful of coriander
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 small chilli

Method

Drain tin corn and add half to a blender. Reserve the other half in a mixing bowl. Dice the onion and reserve a 1-2 tablespoons for the guacamole. Add in all other fritter ingredients and whizz until combined and still a little chunky.

Gently fold mixture into the reserved corn ensuing you don’t over mix.

Heat oil in a pan and scoop fritter batter in, cooking for 3 minutes in the first side and approximately 2 on the second side.

Dice the avocado and tomato and combine with the reserved onion. Season with salt and pepper.

Arrange 2-3 fritters on a plate and top with a generous serve of guacamole. If desired, you can also add a slice of your favourite bread.

Note

This dish would also be delicious with a scoop of chili jam!
