Avocado, hummus and tomato smash

Looking for a fresh and delicious brunch or light dinner? This delicious avocado, hummus and tomato smash (with a few extra twists) is exactly what you need in your life… yummy!

Ingredients

  • Favourite Loaf of bakery bread
  • 1 tomato
  • 1 Avocado
  • 1 spring onion or red onion
  • Sesame seeds
  • Salt and pepper
  • Corriander (optional but delicious!)
  • Hummus

Method

In a small pan, toast sesame seeds on a low heat – this will only take a minute or two.

While sesame seeds are toasting, slice avocado and tomato into chunks and stir together in a bowl with salt and pepper.

Finely slice shallots and coriander.

Time to plate

– If your bread is fresh, I like to thickly slice and have as is. If the bread is a day old, lightly toast before putting on the toppings.
– Place a generous amount of hummus directly onto your bread
– On top of the the hummus, place a large helping of avo/ tomato mix and sprinkle on the top your spring onions, coriander and toasted sesame seeds!

Oh so good!!

Note

If you are making this for dinner, why not add some garlic potatoes to the side – simply delicious!
