Love muesli but find the store bought ones packed with preservatives? Look no further, the below muesli is the biggest hit in our family and is devoured most days of the week as a topping on our smoothie bowls with fresh fruit.

Serves a lot! This amount should last two people about a month if using a small amount most days.
Ingredients
- 1 large packed of rolled oats
- 1 packet of pumpkin seeds
- 1/2 packet of coconut (any works, I prefer shredded)
- 1 large packet of macadamias
- 1 cup of LSA
- 1/2 cup flax seeds
- Generous sprinkle of cinnamon
- 1/3 jar of coconut oil
- 1/3 bottle of maple syrup
Method
Pre heat oven to 170degrees fan forced oven
In a very large bowl mix all ingredients together until combined.
Line a baking tray with parchment paper and pour over the muesli to form a 1 inch layer
Bake in oven for approx 30minutes, stirring the muesli every 10minutes (for the last 10minutes I watch it very closely to ensure it doesn’t burn)
Leave to cool and store in an airtight container

Looking for additional sweetness? Try adding some dried fruit in the last 5minutes of cooking – apricots, sultanas or dates would be delicious!
