Vegan egg salad

Ingredients

  • Heaped 1/4 cup vegan mayo
  • 2 tbsp Dijon mustar
  • 2 tsp dill or pickle relish
  • 3 tbsp nutritional yeast
  • 1/2 tsp kala namak (very important)
  • 1/4 tsp Paprika
  • 1/4 tsp Cumin
  • 400g firm tofu
  • 1/4 cup Spring onion thinly slices
  • 1/4 cup dill
  • 1 tbsp capers

Method

Slice and press firm tofu.

Mix all ingredients except tofu in a bowl then cut tofu into tiny squares and gently fold into marinade.

Marinate for 30 minutes at least.

Note

Serve on bread with picked onions, smashed avocado, tomato and cucumber.
