Vegan sour cream

Ingredients

  • 1 cup raw cashews, soaked overnight
  • ½ cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon Dijon mustard

Method

Rinse and drain cashews and add all ingredients to a blender. Blend until smooth – enjoy ove the next 4-5 days!
