Black bean tortas

Ingredients

  • 1 can black beans (drained and rinsed)
  • 1/2 tsp onion and garlic powder
  • 1/4 tsp salt
  • 1/4 cup water
  • 4 tsp plant mayo
  • 4 whole-wheat burger buns
  • 1 avocado
  • Pico de gallo
  • Shredded lettuce
  • Coriander

Method

In a saucepan, heat black beans, onion & garlic powder, salt and water and bring to the boil. With a potato masher, mash until smooth(ish).

On the rolls, spread mayo, beans, and salad ingredients.
