Ingredients

For bread

  • 3 3/4 cups spelt flour (or whole-wheat flour)
  • 2 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 3/4 cups unsweetened soy milk
  • 1 tbsp lemon juice
  • 1/4 cup maple syrup
  • 1 tbsp vanilla essence
  • 1/2 cup raisins

Topping

  • 1/4 cup maple syrup
  • 2 tbsp oat flour
  • 1 tbsp cinnamon
  • 1 tbsp tahini

Methodw

Preheat oven to 180 degree. Line a loaf pan with grease proof paper.

Mix all topping ingredients together and set to one side.

In a large bowl mix all dry bread ingredients together and then gently add the wet ingredients. Stir in the raisins.

Transfer batter to the loaf pan and pour on the topping ingredients. Bake for 1 hour until top is golden brown.

Note

Serve with strawberry jam or natural peanut butter.
