Potato, tofu breakfast burritos

Ingredients

  • 1 tbsp olive oil
  • 1 packet extra firm tofu (drained and crumbled)
  • 2 potatoes in small chunks
  • Salt and pepper
  • 1/2 tsp garlic powder, smoked paprika and tumeric
  • 2 tomatoes
  • 1 cup water
  • 4 cups baby spinach
  • 4 large whole wheat tortillas
  • 1 avocado
  • 4 tbsp salsa / pico de gallo
  • Black beans

Method

Cook tofu in a pan for 5 minutes.

Add potatoes and cook for another 5 minutes.

Add spices and coat potatoes and tofu well, then add tomatoes and cook for an additional 5 minutes.

Add the water and cook for 8 more minutes (mix should be saucy). Turn off heat and add spinach.

Assemble the burritos with potato mix, avocado, tomato and pico de gallo.

Note

Mushrooms and cauliflower works well. You can also use beans instead of potatoes as well as quinoa and rice.
