Ingredients
- 1 can chickpeas (drained and rinsed)
- 2 tsp vegan mayo
- 1 apple into small cubes
- Juice 1/2 lemon
- 1 celery finely chopped
- 1/2 cup raisins
- 1 tsp curry powder
- 4 whole wheat bread rolls
Method
Mash chickpeas, add mayo and mix until well combined. Add all other ingredients and split the filling between your 4 bread rolls.
Note
Replace chickpeas with firm tofu for an egg like finish.
