Vegetable broth (slow cooker)

Ingredients

  • 1 1/2 tsp olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 2 celery stalks
  • 3 carrots
  • 1 potato
  • 1/4 cup parsley
  • 1 1/2 tbsp soy sauce
  • 1/2 tsp peppercorns
  • 7 cups water
  • 1 tsp salt

Method

Place oil into slow cooker.

Add all other ingredients and cook for 8 hours. Allow stock to cool and drain using a colander.

Note

Will store for 5 days in fridge and 3 months freezer.
