Loaded sweet potatoes

Healthy, delicious and comforting – these loaded sweet potatoes are perfect any night of the week!

Ingredients

  • 3 medium sweet potatoes
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 bunch kale, chopped
  • Salt and pepper to taste
  • 1 can black beans, drained and rinsed
  • 1 can corn
  • 1 avocado
  • 2 Tomatoes
  • 1/2 red onion

Method

Roast sweet potatoes for approximately 45 minutes at 180 degrees – spray lightly with oil to help crisp the outside.

Once cooked, slice open and assemble all ingredients inside the sweet potato and serve!
