Ingredients
- 250g mixed spinach and rocket leaves
- 1/4 pumpkin (cubed)
- Pepitas
- 1 avocado
- 1/2 red onion
- 2 tbsp hummus
- Pine nuts
Method
Roast pumpkin cubes for 45 minutes in 180 degree oven.
Mix all ingredients in a large bowl and top with the hummus.
If you like a lot of salad dressing, you can also make this recipe and drizzle over the top.
