Spinach crepes

Can you get a better breakfast then this? Green goodness everywhere you look – a pleasure for the eyes and tastebuds!

Ingredients

  • 1 cup flour
  • 1 cup self raising flour
  • 1 egg
  • Cherry tomatoes
  • Chilli jam
  • Avocado
  • Spinach leaves
  • Feta
  • Spring onions
  • Coriander
  • Lime

Method

Add flour, milk, egg and 1/2 spinach to a blender and combine.

Prepare the salad by quartering the tomatoes, slicing the avocado, spring onion and coriander.

In a pan, apply a small amount of olive oil and pour in your crepe mixture. Cook on one side for approximately 2 minutes.

Remove from pan, top with spinach, salad ingredients. Sprinkle feta cheese, salt, pepper, lime juice and finish with chilli jam.
