Power salad

Who said a salad can’t be a main meal? This super charged salad is packed with goodness and will satisfy any appetite!

Ingredients

  • Sweet potatoes (unpeeled)
  • Quinoa
  • Broccoli
  • Chilli
  • Salt and pepper
  • Ground corriander
  • Cinnamon
  • Garlic salt
  • Onion salt
  • 100g pecans
  • Avocado
  • Pomegranate
  • Lime
  • 3 tsp Balsamic vinegar
  • Corriander
  • Feta cheese

Method

Cook the quinoa and steam greens.

Bake sweet potato seasoned with salt, pepper, cumin, garlic and onion salt plus cinnamon and a dash of oil for 40-50 minutes.

Extract pomegranate juice, add an equal amount of olive oil plus juice of one lime, salt and pepper. Add balsamic vinegar and combine well.

On a serving plate, add chopped coriander and sliced chilli. Top with broccoli, quinoa, dressing and nuts – mix together and top with feta cheese, pomegranates, sweet potatoes and avocado.
