These sticky, sweet mushrooms make the most delicious side dish and best of all can be made in under 15minutes!

Ingredients
- 1kg mushrooms
- 6 cloves garlic
- Thumb sized piece of ginger
- 2 tbsp oil
- 1/2 cup water
- 2 cups of dried apricots
- 2 tbsp mirin
- 2 tbsp tamari
- 1 tbsp brown sugar
- 1 tsp cornflower
- 1 tbsp hosin sauce
- Squeeze of lime
Method
First prepare the ingredients by finely dicing the garlic and ginger and slicing the mushrooms.
In a seperate bowl, combine soy sauce, mirin, hoisin, sugar and corn starch.
Slice and then soak the apricots in boiling water and set aside.
Add the oil to a pan and cook mushrooms for 5 minutes before adding the garlic and ginger until fragrant.
Add the apricots and sauce mixture to the pan and cook for another 3 minutes.
Serve with pasta, gnocchi, roasted vegetables, rice dishes or add to a wrap – simply delicious!
Note
Mushrooms will store for 3 days in the fridge. Make in advance and warm in a pan before serving.
