This delicious hummus wrap makes the perfect lunch! Simple to assemble, you will have a fresh hummus wrap in no time!

Ingredients
- 2 large whole wheat tortillas
- 1 avocado
- 1 large tomato
- 1/2 red onion
- Parsley (other herbs will also work)
- 3 tbsp hummus
- 1 cucumber
- 1 cup rocket and spinach
- Toasted sesame seeds
- Beetroot
- 1 tbsp vinegar
- Salt and pepper
- 1/2 tsp sugar
Method
First pickle the beetroot by grating into a bowl and topping with vinegar, salt and pepper and a small amount of sugar.
Place a generous amount of hummus onto the wrap and top with sliced salad ingredients. Sprinkle some shredded parsley and toasted sesame seeds the top and fold the wrap.
Slice in half diagonally and serve.
Note
If you have any other salad ingredients such as sprouts or capsicum, these will also work well.
