These beautiful bean burritos are packed with goodness and taste amazing!

Ingredients
- 6 large whole-wheat tortillas
- 1 tbsp garlic powder
- 1 tbsp onion power
- 2 tsp cracked black pepper
- Generous pinch of salt
- 4 cloves garlic
- 2 red onions
- 1 tin of white beans
- 1 tin of black beans
- 1 tin of corn
- 1 packet of microwave brown rice
- 6 small tomatoes
- 2 avocados
- 1 lime
Method
Dice 1 onion and the garlic cloves. In a large pan, sauté for 2 minutes in a small amount of oil then add onion and garlic power. Pour in the two tins of beans (juice and all) as well as the rice and simmer on a lowered heat until thickened.
While the beans are cooking, dice tomatoes, 2nd red onion and avocados. In a seperate bowl, gently mix together and season with salt, pepper and lime.
When the beans have thickened, add in the tin of corn and combine. Remove from heat, clean pan and get your tortillas ready.
In the clean plan, put in the tortilla, spoon on a generous amount of bean mix and top with the tomato mix. Fold in both ends of the tortilla and then roll over tucking the other two sides to form the perfect burrito.
Toast in pan until lightly browned and serve immediately. The beautiful bean burrito is perfect with a side of garlic potatoes!
Note
If you have any bean or tomato mix left over, simply transfer to an airtight container and use the next day for left overs!
