Who doesn’t love a crispy garlic potato! With only 2 minutes prep time, these delicious beauties are sure to delight!
Serves
4 (side dish)
Ingredients
- 1/2kg potatoes (use any that are designed for baking – my favourite are the russet)
- 1 tbsp garlic powder
- 1 tbsp onion power
- 2 tsp cracked black pepper
- Generous pinch of salt
- 1 tbsp coconut oil
Method
Preheat oven to 180 degrees celsius.
Peel potatoes and slice into bite sized cubes. Transfer to a bowl and add all other ingredients, still until well combined.
Bake in the oven for 30 minute and then turn heat up to 200 degrees for the final 10 minutes of cooking until golden brown.
Serve immediately with vegan garlic aioli.
Note
If you have left overs, reheat in the oven rather then the microwave. Garlic potatoes will crisp up again and be delicious!
