Shiitake wraps

Packed with goodness, great for your heart and for boosting immunity, these shiitake wraps make the perfect lunch. Prepare in bulk for easy daily assembly.

Ingredients

Mushrooms
  • 1kg shiitake mushrooms
  • 1 red onion
  • 2 tsp thyme
  • 1 tbsp olive oil
  • Salt and pepper
Wrap
  • 4 large whole meal wraps
  • 3 tomatoes
  • 1 carrot, grated
  • Lettuce leaves (any type work well)
  • Tahini
  • Hummus
  • 1 avocado
  • Chili sauce of your choice (sriracha mayo, chili jam, sweet chili sauce all work well)

Method

Dice onion and halve shiitake mushrooms. In a pan, add all mushroom ingredients and sauté for 6 minutes until tender and lightly browned.

For easy assembly of your wrap, simply slice tomatoes and avocado and place inside the wraps with the lettuce. Mix the hummus and tahini together to make a sauce, then add in the shiitake mushrooms.

Serve immediately with your choice of chili – delicious!

Note

If you are gluten free, simply replace the wraps with lettuce leaves.

The wrap in photo has crumbed shiitake as another alternative. If you prefer crumbed, roll shiitake in plant based milk and bread crumbs before frying with herbs in the pan.

Cooked mushrooms will store in the fridge for 3 days so you can simply re-heat and make a fresh wrap each day!
