San chow bow

Crispy lettuce leaves packed with goodness that can be whipped up in under 20 minutes!

Serves

4

Ingredients

  • 1 carrot
  • 1/4 cabbage
  • 1 capsicum
  • 1 zucchini
  • 1/2kg Mushrooms
  • 1 tin brown lentils
  • 1 onion
  • 3 cloves garlic
  • 1 thumb sized piece of ginger
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 iceberg lettuce
Optional
  • 1 red chilli or;
  • 1 tbsp chilli jam or;
  • 1 tbsp sweet chilli sauce
  • …. Or; all three!

Method

Sauté onion, garlic and ginger until fragrant. Dice all vegetables into small cubes and add into pan, add a little water to help these soften. Drain and rinse lentil and add to pan along with soy sauce, mirin and chilli of choice.

Cook for approximately 5 minutes while you prepare the lettuce leaves.

Carefully remove the core of the lettuce with a knife. Once this is removed, the leaves should be easy to carefully seperate.

Serve leaves and filling separately and everyone can make their own delicious lettuce cups!
