Comfort food at its best, enjoy these delicious eggplant burgers when you are craving fast food. All the flavour without the extra calories for the waistline.

Ingredients
Burger Pattie’s
- 1 eggplant
- 1 tin white beans
- 3 garlic cloves
- 1 red onion
- 1 tbsp extra virgin olive oil
- 1-2 garlic cloves
- 1 tbsp toasted sesame seeds
- 2 tsp garlic salt
- 2 tsp onion powder
- 1 tsp oregano
- 1 tsp cumin
- 2 tbsp flax seeds
- 1/2 cup bread crumbs
Burger assembly
- 4 burger buns
- 2 tomatoes
- 1/4 tin beetroot
- Lettuce leaves (rocket or baby spinach tastes amazing)
- Mayonnaise (or vegan mayo!)
Method
Preheat oven to 200 degrees celsius.
Cut eggplant longways and drizzle with olive oil, salt and pepper. Bake in oven for 20 minutes, flip over and toast for another 10 minutes.
Once cooked scoop out the centre of the eggplant and in a blender, combine with the other patty ingredients. Place mixture in the fridge for 1 hour (if short of time, you can skip this step and go straight into moulding your burghers).
Form burger patties and fry in a pan until golden brown.
Assemble burgers with the other ingredients and top with a nice spread of mayonnaise.
Serve with a fresh side salad or oven roasted potatoes.
Note
If gluten free, substitute the bread crumbs for gluten free bread crumbs and replace the burger buns with lettuce leaves.
