Ultimate vegetarian nachos

When backpacking, it’s great to have a few recipes which can be prepared without any cooking equipment at all. These vegetarian nachos are super simple and all the tin ingredients below can be replaced with fresh if available.

Ingredients

  • 1 large tin of corn
  • 1 large tin of black beans
  • 1 packet of corn chips
  • 2 tomatoes
  • 1/2 red onion
  • 1 tin of jalapeños
  • 1 jar of salsa
  • 2 avocardos
  • 1/2 lime
  • Grated cheese (if vegan, leave out the cheese and the nachos will still be delicious)
  • Salt and pepper

Method

First make the guacamole by mashing the avocardos with a fork and seasoning with salt, pepper and lime.

Drain the corn and black beans.

Dice the tomatoes and onion, mix together and season with. Little salt and pepper.

In individual serving bowls, arrange the corn chips and top with all the other ingredients.

While this meal is served cold, none of the flavour is lacking and you will be able to enjoy a delicious Mexican dinner without any stove or microwave!
