Super snickers overnight oats

Snickers for breakfast anyone? And best of all, this recipe is packed with goodness to give you energy for the day!

Method

  • 1 cup rolled oats (use the chunky ones, not the quick oats)
  • 1 cup soy milk (or milk of your choice – water will even work but you will lose some creaminess)
  • 4 medjool dates
  • 2 tbsp chi seeds
  • 1/4 cup boiling water
  • 2 tbsp natural peanut butter
  • Pinch of salt
  • Grating of dark chocolate

In a bowl, soak the dates in boiling water for 5 minutes. Transfer to a blender (with the liquid) and blend with peanut butter, soy milk and salt until combined.

Combine liquid mixture with oats and chia seeds then divide between two containers for the fridge.

Before putting in the fridge, grate dark chocolate over the top, seal and leave overnight.

Note

Overnight oats will last for three days so this recipe is great to make in bulk for a few days.
