Say no more… who wouldn’t love some PB & J oats for breaky!

Ingredients
- 1 cup rolled oats (use the chunky ones, not the quick oats)
- 1 cup soy milk (or milk of your choice – water will even work but you will lose some creaminess)
- 2 heaped tsp sugar free Jam (I love strawberry)
- 2 heaped tsp peanut butter
- Pinch of salt
- 1 tbsp chi seeds (optional, great if you have them)
Method
Option 1 – The quick and easy combo
Put all ingredients into a bowl and mix until combined. Pour half the mixture into one glass and half into another glass. Ensure the mixture is covered before transferring to your fridge.
Leave overnight and enjoy for breakfast.
Option 2 – Lovely layers
Add the oats, chia, milk and salt to a bowl and combine. In the glass for the fridge, add one tablespoon on oat mixture then drizzle a little jam and peanut butter, continue this process until your glass is just under 3/4 full. Complete the same for your second jar.
Cover and refrigerate – enjoy for breakfast the next day!
Note
Overnight oats will last for three days so this recipe is great to make in bulk for a few days.
