Japanese rice bowls

Super simple, quick delicious and nutritious – perfect for a weeknight dinner!

Ingredients

  • Brown rice
  • 3 tablespoons Mayonnaise (there are now good vegan ones available)
  • 2 carrots
  • Large handful of snow or sugar snap peas
  • 1 tablespoon of chopped dill
  • 2 fresh corn
  • 1 -2 tablespoons of Mirin
  • 1-2 tablespoons of soy sauce
  • Originally we ate this recipe with 500g pork mince. You can also chose from shiitake mushrooms or tofu for the same delicious result.
  • Sesame seeds
  • Splash of oil of your choice (or vegetable stock if oil free)
  • Salt and pepper

Method

If using tofu, drain and press between paper towel or two clean tea towels. Put something heavy on top for approximately 10 minutes to drain the water from the tofu – a cookbook works perfectly!

Cook the brown rice as per the pack instructions (if short on time, I always have microwave brown rice on hand that’s ready in 2 minutes).

In a pan, add the splash of oil or vegetable stock and add your ‘meat’ of choice (tofu crumbled, shiitake mushrooms or pork mince). Cook for a few minutes and then add mirin and soy sauce.

Cut carrot into matchsticks, top and tail the peas and slice vertically. Steam with the corn for approximately 5 minutes while meat of choice is cooking at a lowered heat.

Prepare the dill mayonnaise by finely chopping the dill and stirring into the mayonnaise.

Time to plate
-Add the rice first in your bowl to form a base.
– Arrange the carrots, snow peas and corn in one half and the ‘meat’ of choice in the other
– Top with a dollop of dill mayonnaise and a sprinkle of toasted sesame seeds, salt and pepper.

Note

Any vegetables you have on hand would work well – whatever is left in your fridge will work perfectly!
