Coriander pesto sauce

Ingredients

  • 1/4 cup of any nut (pistachio’s suggested)
  • 2 cups coriander
  • 2 garlic cloves
  • 1 chopped jalapeño
  • 1/2 lime (zest and juice)
  • Salt and pepper
  • 1/2 cup olive oil

Method

Toast and then blitz nuts.

Add all ingredients (except oil) to a food processor and blend. Slowly drain in oil until you reach the right consistency.

Will store for 5 days.
