This delicious simple weeknight gnocchi is sure to be a family favourite.

Ingredients
- 1 kg fluffy potatoes
- 1 – 1 1/2 cups flour
- 1 flax egg
- 2 cloves garlic
- 1 zucchini
- 1 red capsicum
- 400g mushrooms
- 400g Cherry tomatoes
- 1 red onion
- 2 tbsp pesto
- 1 tin tomatoes
- Parmesan (plant-based)
Method
Wash and pierce potatoes and cook for 25 minutes in the microwave. Leave skins on.
Once potatoes are cooked, remove skins, mash using potatoes ricer and season with salt and pepper. Add the flour and egg to potatoes and knead on flour dusted surface.
Roll into skinny logs and slice into gnocchi pieces.
In a large pan, grill vegetables until softened and lighten charred.
In a small on combine pesto and tin tomatoes.
Put the gnocchi in boiling salted water for 1-2 minutes until they float to the top.
Drain, and mix gnocchi in with sauce and arrange vegetables on the top. Serve with plant based Parmesan.
