Chimichurri

1/2 cup

Ingredients

  • ½ cup chopped parsley
  • 4 cloves garlic
  • 1 spring onion
  • 1 tsp dried oregano
  • 1 small red chili (or 2 tsp red pepper flakes)
  • 3 tbsp red wine vinegar
  • Salt and pepper
  • ⅔ cup good-quality extra-virgin olive oil

Method

Add all ingredients into a food processor until combined. Store in the fridge for no more then 3 days.
