Ingredients
Bowl
- 1 can chickpeas (drained and rinsed)
- 500g potatoes
- 1/4 tsp cardamom, cinnamon, paprika, turmeric
- 2 tsp cumin
- 1 cup quinoa
- 2 cups shredded lettuce
- 1 cucumber
- 1 punnet cherry tomatoes
- 2 pickles
Sauce
- 1/4 cup tahini
- 1/2 tsp garlic powder
- 2 tsp soy sauce
- 4 garlic cloves
- 1/4 cup fresh lemon juice
Method
Pre heat oven to 220 degrees and cook the quinoa according to packet instructions.
Cut potatoes into wedges and spread on baking tray, also add the chickpeas to the middle of the baking tray.
Sprinkle all herbs over the tray and bake for 15minutes, stir, bake for another 15 minutes.
Mix all sauce ingredients together to make the sauce and set aside. Add more water if required.
Divide ingredients into the large bowls and drizzle with the sauce.
