Ingredients
- 1 cup carrots
- 1 cup zucchini
- 1 cup vegetable stock
- 1 tbsp nutritional yeast
- 1 tsp Rosemary
- 1/2 tsp dried parsley
- 2 cups eggplant
- 2 cups red onion
- 2 cups pumpkin
Method
Preheat oven to 180 degrees.
Mix all ingredients together and transfer to a baking tray. Cook for 45 minutes, stirring each 15.
