Roast vegetables

Ingredients

  • 1 cup carrots
  • 1 cup zucchini
  • 1 cup vegetable stock
  • 1 tbsp nutritional yeast
  • 1 tsp Rosemary
  • 1/2 tsp dried parsley
  • 2 cups eggplant
  • 2 cups red onion
  • 2 cups pumpkin

Method

Preheat oven to 180 degrees.

Mix all ingredients together and transfer to a baking tray. Cook for 45 minutes, stirring each 15.
