Lentil soup with lemon herbs

Ingredients

  • 2 cans lentils (drained)
  • 4 cups water
  • 1 tsp olive oil
  • 2 garlic cloves
  • 1 celery stalk
  • 2 carrots
  • 1 potato (diced)
  • 1 zucchini (diced)
  • 1 can tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 2 cups baby spinach
  • Juice of 1 lemon
  • 1 tsp salt

Method

Add all ingredients except spinach, lemon and salt to a slow cooker and cook for 6 hours. Add the remaking ingredient and cook for another 10mins.

Or… cook onion and garlic for 5 minutes, add celery, carrots and potato for another 5 minutes. Add in tin lentils, zucchini, tomatoes, Italian seasoning and paprika to boil with 4 cups water. Simmer for 10 minutes then add spinach, lemon and salt.
