Creamy tuscan cauliflower pasta

Ingredients

  • 1 packet whole-wheat fettuccini
  • 1 can light coconut milk
  • 1 tbsp capers
  • 1/2 vegetable stock
  • 1/2 fresh basil
  • 1/2 cup sun dried tomatoes
  • 4 cups cauliflower
  • 3 tbsp nutritional yeast
  • 2 tsp dried Basil
  • 1 tbsp onion powder
  • 2 tsp chickpea flour
  • 1 tsp garlic powder

Method

Heat coconut milk, stick, yeast, dried basil, garlic and onion powder and chickpea flour in a pan.

Stir in cauliflower, sun-dried tomatoes and capers. Simmer covered for 25 minutes and cook the pasta according to packet instructions .

Add basil and cook for a final minute.

Pour over cooked pasta and add pasta water to get the right consistency.
