Beetroot and avocado bowls

Ingredients

  • 2 beetroots
  • 3 cups water
  • 2 tsp tamari
  • 1/2 tsp wasabi paste
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 cup edamame
  • 1 cup cooked brown rice
  • 1 cucumber
  • 2 carrots (matchsticks)
  • 1 avocado
  • 1 spring onion
  • 2 tbsp toasted sesame seeds

Method

Cook brown rice.

Bring better pot and water to the boil on high heat. Lower heat and cook for 15 minutes.

To make the dressing, mix soy sauce, wasabi, maple syrup, sesame oil, vinegar and set aside.

Once beetroots have cooled, remove skin and slice into incredibly thin slices. Put these in a bowl and top with 1 tsp of the dressing.

Cook edamame for 1 minute in the microwave and assemble the bowls with all ingredients.
