Red tofu curry (slow cooker)

Ingredients

  • 1 tbsp coconut oil
  • 1 extra firm tofu packet
  • 3 cups baby carrots
  • 2 cups potatoes
  • 2 onions
  • 6 cloves garlic
  • 1 inch piece ginger
  • 1 3/4 cup water
  • 1 cup unsweetened coconut milk
  • 1 1/3 tbsp red curry paste
  • 1 vegetable stock cube
  • Salt and pepper
  • Cooked brown rice
  • Coriander

Method

Cook tofu in a pan until edges are brown for approximately 5 minutes.

Place into slow cooker with all other ingredients and cook for 6-8 hours on low or 3-4 hours on high.

Cook brown rice and serve with coriander.

Note

Swap tofu for 1/2 cup quinoa and 1 can chickpeas.
