Mushroom stroganoff (slow cooker)

Ingredients

  • 500g mushrooms
  • 1 1/2 cups vegetable broth
  • 1 cup kale
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 2 tsp paprika
  • 1/2 cup vegan sour cream
  • 1/4 cup fresh parsley
  • Rice, pasta or quinoa

Method

Place all ingredients into a slow cooker except sour cream and parsley and cook for 6-8 hours on low.

Stir in sour cream and parsely before serving and serve with rice, pasta or quinoa.
