Ingredients
- 1 butternut pumpkin
- 3 cups stock
- 1 onion
- 1 capsicum
- 1 can chickpeas
- 1 can tomatoes
- 3/4 cup brown lentils
- 1 1/2 tsp minced ginger, ground ginger, turmeric, cumin, cinnamon
- 3/4 tsp smoked paprika
- Salt and pepper
- 1 packet udon noodles
Method
Place all ingredients (except noodles) in slow cooker for 6-8 hours on low. In the last 10 minutes, add the udon noodles and season with salt and pepper.
