Chickpea stew (slow cooker)

Ingredients

  • 1 butternut pumpkin
  • 3 cups stock
  • 1 onion
  • 1 capsicum
  • 1 can chickpeas
  • 1 can tomatoes
  • 3/4 cup brown lentils
  • 1 1/2 tsp minced ginger, ground ginger, turmeric, cumin, cinnamon
  • 3/4 tsp smoked paprika
  • Salt and pepper
  • 1 packet udon noodles

Method

Place all ingredients (except noodles) in slow cooker for 6-8 hours on low. In the last 10 minutes, add the udon noodles and season with salt and pepper.
