Ingredients
- 1 tbsp olive oil
- 1/2 kg red potatoes (diced)
- 3 garlic cloves
- 2 inch piece of ginger minced
- 1 yellow onion in chunks
- 3 tsp curry powder
- 2 cups water
- 1 cup frozen peas
- 3 tbsp tomato paste
- 1 tsp salt and pepper
- Red pepper flakes
- 1/4 cup coriander
Method
Cook potatoes in a large pan until brown (approx 10mins). Move to one side of the pan and cook onion, garlic and ginger. Combine mixtures then add curry powder and water – bring to a boil then lower heat for 10-15mins.
Stir in teas, tomato paste, salt and pepper until this reduces to creamy sauce (5mins).
Serve with coriander and red pepper flakes.
Note
You can add a ton of chickpeas and spinach if you would like extra nutrition.
