Brown rice and black bean veggie burgers

6 Patties

Ingredients

  • 1 cup water
  • 1 cup sweet potato cut into small pieces
  • Olive oil spray
  • 1 can black beans (rinsed and drained)
  • 1 1/2 cup brown rice (cooked)
  • 1 tbsp garlic and onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp tapioca flour
  • 1 tsp ground flax seeds
  • 1 tbsp nutritional yeast
  • 1/4 tsp salt

Method

Pre heat oven to 220 degrees.

Bring water to the boil and cook sweet potato for about 10mins until softened. Drain, set aside.

In a large bowl, combine beans, sweet potato and mash until chunky. Add all other ingredients (mixture will be sticky) .

Form 6 patties and place onto sheet pan with olive oil spray. Bake for 10mins, flip and bake for another 10mins until brown and crispy.

Note

Make in bulk and store in the fridge for 5 days or freezer for 3 months. Thaw in the fridge and air fry until warmed. After the Patties have cooked, make sure they are completely cooked before individually wrapping in cling wrap.
