This fresh, healthy noodle salad makes the best weeknight meal.

Ingredients
- Wholewheat rice noodles
- 1 cup shredded purple cabbage
- 1 cup carrot ribbons
- 1 cup baby spinach
- 1 1/2 cups red capsicum sliced thin
- 1 cup edamame
- 1/2 cup chopped coriander
- sesame seeds garnish
Peanut sauce
- 1/2 cup peanut butter
- 2 tsp sriracha
- 4 tbsp soy sauce
- 3 tbsp rice vinegar
- 1/4 cup water
- 1 tbsp maple syrup
- 1 tbsp toasted sesame oil
- 1 tsp garlic powder
- 1 tsp ginger powder
Method
Cook noodles to package instruction.
Thinly sliced cabbage, carrots and capsicum. Add to a bowl with coriander spinach and edamame.
Make sauce by combining all ingredients. Add warm noodles to the salad mix and top with the peanut sauce. Combine well and serve.
