Simple gnocchi with sauce

This simple gnocchi is sure to be a family favourite.

Ingredients

  • 1 kg fluffy potatoes
  • 1 – 1 1/2 cups flour
  • 1 egg (or flax egg)
  • 2 cloves garlic
  • 3-4 red or orange capsicums
  • Tin tomatoes
  • 2 fresh tomatoes
  • Basil
  • Parmesan (plant-based)

Method

Wash and pierce potatoes and cook for 25 minutes in the microwave. Leave skins on.

Char capsicums on gas burner for 10-15 minutes until charred. Place in a bowl, cover to capture the steam and then the skin will easily peel off. Remove seeds and slice.

In a saucepan, add the chopped capsicum, garlic, tin tomatoes and chopped tomatoes. Reduce head and leave simmering on very low.

Once potatoes are cooked, remove skins, mash using potatoes ricer and season with salt and pepper. Add the flour and egg to potatoes and knead on flour dusted surface.

Roll into skinny logs and slice into gnocchi pieces. Cook in boiling salted water for 1-2 minutes until they float to the top.

Drain, and mix gnocchi in with sauce. Serve with plant based Parmesan.
