Wanting comfort food without the calories? These delicious and satisfying sesame noodles with caramelised onions will sure to be a hit!

Ingredients
- 2 1/2 cups vegetable stock
- 3 cloves of garlic
- 200g baby spinach
- 300g mushrooms
- Spring onions
- Ginger
- 1/5 cup maple syrup
- 2 tbsp balsamic vinegar
- 1 tbsp pomegranate molasses
- 3 tbsp peanut butter
- 1/2 cup tamari
- Brown rice noodles
- Sesame seeds
- Sesame oil
- Rice vinegar
- Pepper
- Chilli jam
Method
Boil water and cook noodles as per the packet directions. Once cooked drain and set aside.
Combine soy, maple, balsamic, rice vinegar, ginger and garlic in a bowl with 1/3 cup of water.
In the empty noodle pot, add the stock and 1/2 of the sauce mixture. Simmer for 3 minutes and add the spinach leaves.
In a fry pan, heat oil and add thinly sliced mushrooms. Leave for 5 minutes for mushrooms to cook and then add spring onions., ginger and garlic cloves. Add 2 tbsp of soy sauce, maple syrup and pepper. Allow this to cook while mushrooms get caramelised. Remove mushrooms from pan.
Add the remaining sauce mixture to the warm pan as well as rice noodles until coated.
Plate in a bowl so, noodles, top with mushrooms, more sesame seeds and fresh spring onions.
Serve with a dollop of chilli jam for the ultimate dish!

Serve with Asian greens.
