Mushroom stroganoff

I absolutely love a stroganoff. Creamy and delicious, perfect for any dinner!

Ingredients

  • 2 red onions
  • 3 cloves of garlic
  • 1 lemon 
  • 500- 750g shiitake mushrooms
  • Fresh Tyme
  • Tomato paste
  • olive oil 
  • 1 large knob of unsalted butter
  • 1 large tub of sour cream
  • Good quality whole wheat pasta

Method

Fry onion and garlic in a pan, add tomato paste, fresh Tyme and mushrooms with the knob of butter and cook for 5 minutes. If using meat, add in at this stage as well (refer note).

Cook the pasta as per the packet instructions.

Remove mushroom mix from heat and stir through the sour cream. Squeeze with lemon and season with salt and pepper before serving on top of pasta.

Note

If you eat meat, reduce the mushrooms by half and add 500 g fillet steak.
