Green Mac and cheese

  • Leek
  • Tyme
  • 3 cloves of garlic
  • 1 bunch of broccolini
  • 2 tbsp whole wheat flour
  • 1 litre milk
  • 150g cheddar
  • 30g Parmesan
  • 450g cooked macaroni
  • 50 g slithered almonds
  • 100g spinach

Method

Split leeks in half and slice.

In a pan, add butter and sauté leek with tyme along with 3 cloves of garlic. finely slice the stems of broccoli and add to pan – cook for 15 minutes until softened. Set the florets aside.

Add 2 tbsp of flour and 1 litre of milk. leave to simmer and thicken. Turn off heat and then add cheese.

Finally add 100g spinach and with a hand blender, turn into a sauce.

Add 450g cooked pasta, fold in broccoli florets and top with flaked almonds.

Bake for 30mins at 180 degrees celsius.
