This vegan mayonnaise is packed with favour and you will never need store bought again!

Ingredients
- 2 cups of light olive oil
- 1 cup soy milk (room temperature)
- 2 tsp Dijon mustard
- 1 tsp garlic salt
- 1 tsp onion salt
- 4 teaspoons white vinegar
Method
In a blender (use the setting that whips and allows a lot of air to circulate), combine all ingredients expect for the oil. Blend for 30 seconds until combined.
Slowly pour in the oil while the blender is on a low setting – this should begin to emulsify and become really thick!
Transfer to an airtight container and refrigerate for up to two weeks.
Note
Adding fresh garlic, smoked paprika or sriracha to your vegan mayonnaise make delicious alternatives!
