Fried rice

Fried rice is a dish when you have left over rice in the fridge and veggies that are calling to be cooked! Almost any vegetable works well.

Ingredients

  • 2 cups cooked brown rice
  • 1 carrot
  • 1 zucchini
  • 1/4 broccoli
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 thumb sized piece of ginger, grated
  • 1 tin of corn
  • 3 tablespoons of soy sauce
  • 1 tablespoon sesame oil
  • Sesame seeds
  • Drizzle maple syrup
  • Salt and pepper

Method

Prepare all vegetables by slicing into very small cubes. For the broccoli, I like to slice the florets thinly for my fried rice.

In a pan, add the sesame oil, onion, ginger and garlic. Cook for a few minutes until fragrant before adding the sliced vegetables, stirring frequently.

Add the soy sauce and if required, a small amount of water.

Finally, add in the rice and drizzle a small amount of maple syrup into the pan. Stir until well combined and leave for 2 minutes for the rice to crisp up with the vegetables.

Top with sesame seeds and serve immediately. I love to pair with my garlic potatoes – you can find the recipe here.

Note

Any vegetables you have on hand would work well – whatever is left in your fridge will work perfectly!

You can also top with baked tofu to make this dish extra hearty.
