Wendy gill tomatoes

  • 3 tomatoes sliced 8mm thick
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tbsp lemons juice
  • 3 tbsp minced red onion
  • 4 large basil leaves diced
  • 1 tbsp diced fresh parsley
  • 1 clove garlic
  • 1/2 tsp sea salt
  • Fresh pepper

Mix dressing and place in fridge for minimum 1 hour.
